Green Tomato Relish

This jogs my memory of the recent canine relish I had as a baby. Goes nice on burgers, too.

  • 6 cups (900gr) finely chopped inexperienced tomatoes
  • 2 small – medium onions, finely chopped (1 1/3 cup, 180gr)
  • 1 giant purple bell pepper, finely chopped (1 1/2 cups, 180gr)
  • 1 tbs sea / course salt (1 1/2 tsp desk salt)
  • 1 cup cider vinegar
  • 1/4 cup (50gr) white sugar
  • 1/4 cup (45gr) brown sugar
  • 1 1/2 tbs Dijon-style mustard (scorching)
  • 1 tbs mustard seed
  • 1 tsp celery seeds
  • Mix inexperienced tomatoes, onion, bell pepper and salt in a saucepan.
  • Stir in vinegar, sugars, mustards and celery seeds.
  • Carry the combination to a delicate boil over medium warmth.
  • Cut back warmth to low and simmer, stirring sometimes, till the tomatoes, onions and bell peppers are very tender, about quarter-hour.
  • Refrigerate for as much as 2 weeks or freeze.

Notes

Chopping the tomatoes is time consuming. Use a meals processor you probably have one. I don’t.
